GRAPE VARIETY: Nero di Troia, Bombino Nero
ALCOHOL: 13% vol.
SERVING TEMPERATURE: 12° - 14°

FEATURES: Criomaceration at a temperature of 5° C. Soft pressing and extraction of the must after 5 hours, then controlled fermentation at a temperature of 14° C in stainless steel fermenting tasks. The RUBEO is reļ¬ned on thin dregs for 3 months with some periodic batonage.

BOUQUET: Soft and flowery, with a strong hint of rennet.
PALATE: Fresh and pleasant.
FOOD PAIRINGS: Excellent with sushi and sashimi, fish, seafood and white meats.
